Chicken-in-a-watermelon

Recipe from Cooking 1-2-3 by Rozanne Gold (below is a shorter write-up than in the book).

1 Very large Watermelon
5-6 pound roasting chicken
1 or more tablespoons five-spice powder


Preheat oven to 400 degrees. trim the bottom of the melon so that it will stand upright along its horizontal axis. Cut off the top third of the melon and scoop out enough of the inside to make room for the chicken.

Spice the chicken with salt, pepper, and chinese five-spice. Place the chicken in the melon and replace the top. Put the whole thing in a pan and place in the oven at 400 for 2 hours. Reduce the heat to 300 and cook for another 1 and 1/2 to two hours (until done, by thermometer test).

The juice left in the watermelon can also be used to make gravy for the chicken.

[Note: This recipe immediately attracted us to its very unusual ideas. The bird turned out wonderfully, and had great flavors. It has also inspired us to consider other such creations, like cornish-game-hen-in-honeydew or the slightly dangerous ham-in-a-cactus.]
